Vinification

Production: Hand-sorted. Native yeast. Unfiltered. Unfined.
On Fermentation: Fermented on the skins in concrete and wooden tanks for 14 days. Temp controlled. Pressed

Aged 5 months in wooden and concrete tanks

Tasting notes

Straightforward crisp acidity.  The palate is dry, but the aromas of white chocolate, jasmine, and white pepper are very gorgeous. There are also fresh citrus nuances that make you want to drink another glass.

Winery Description

Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path.  While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
