Viticulture

Grapes are sourced from vineyards in Monterey that have SIP certification for sustainable farming practices.

Vinification

100% destemmed grapes in skin contact for 40 days to extract a beautiful orange color.
Fermentation with wild yeast. Unfiltered and unfined.

Aged in large 900 gallon wooden tanks

Tasting notes

The aroma is reminiscent of the gorgeous smell of entering a flower shop, with orange blossoms, honeysuckle, chamomile, and potpourri that are very refreshing. It is light on the palate, but has a delicious flavor. 

Pairing

An excellent match with citrus sauces such as yuzu kosho and lime.

Winery Description

 

Union Sacre is one of the most unique wineries on the Central Coast. Devoted to Alsance varieties only thing that can be said is it is treading a new path.  While other chase more mainstream things, this label, with its French born and raised winemaker, is doing things in a different way. Xavier Arnaudin studied winemaking in France and was supposed to go to Argentina for his first international winemaking internship. However, due to an unfortunate happening, he ended up in Paso Robles. Since arriving, he has never looked back.
